Today is National Apple Day and to celebrate here is a simple toffee apple recipe. Perfect for autumn.

Toffee apples

Makes 12

Ingredients

12 small apples

12 wooden skewers

600g caster sugar

200ml water

40g butter

20ml liquid glucose

Method

Wash and dry the apples and then skewer through the stalk end of each apple. Dissolve the sugar in the water in a small saucepan over a low heat then add the butter and glucose. Turn up the heat and cook rapidly without stirring. Set a sugar thermometer in the pan and boil to 140C or the ‘hard crack’ stage. Place saucepan in a large bowl of boiling water to stop the toffee setting and then work quickly, dipping each apple in the toffee and coating completely. Stand upside down on grease proof paper until set. Store in a dry place.
